It’s amazing how much mis-information has been printed by suppossedly well-meaning researchers. The egg is a prime example. It’s hard to believe how many patients I see that still believe the egg yolk is bad and only consume egg whites. There is very little research to substantiate the ASSumption that too many eggs or egg yolks raises cholesterol levels and there is growing research to support just the opposite. The traditional med-think goes something like this: Cholesterol is bad, eggs are high in cholesterol, therefore they are bad for you. Fortunately, things don’t operate that way in the body. Eggs are also high in things like lecithin which is a fat emulsifier. We need cholesterol for hormone synthesis – especially if you’re a female! Your needs are higher.
